Stuffed Celery - A Holiday Appetizer to Please Your Family

This tasty finger food is quick for you to prepare and is a big hit at parties. Make it for your next party.

I was asked to make an appetizer (of my choice) for a Christmas party last weekend. I decided to do something different (for me) and make a cold app, rather than my usual hot one.

I planned on making a cheese and cracker platter, but after an overwhelming couple of hours in the grocery store, I ended up with way more than I had planned. I left with a mixture of tasty items-olives, marinated mushrooms, tomatoes, celery and pepperocinis, along with different cheeses and cracker selections. When it came down to it I couldn't fit everything on the platter and left the cheese and crackers aside (for my husband to consume during the week, I would later learn.)

The hit of my platter was definitely the stuffed celery. This recipe was something my mother made every Thanksgiving and was always devoured within minutes. It was clearly a crowd pleaser (my immediate family equals twenty people). In fact, it is so good that I was asked to make it again for Christmas Eve. I made only one change to Mom's recipe-I added chopped walnuts for crunch. Feel free to omit for anyone with a nut allergy.

Stuffed Celery

Ingredients:

  • 1 8 oz pkg softened cream cheese
  • 2 tbsp sour cream
  • 1/4 cup chopped walnuts
  • 20 green olives w/ pimentos, chopped
  • 1 bunch celery, cut into 2-3" sections

Directions:

  • In a medium bowl, mix together the cream cheese and sour cream.
  • Stir in the walnuts and chopped olives.
  • Spread filling onto the celery pieces.
